EGGS SORT OF FLORENTINE 
Sliced white bread, buttered
Deli ham-quality depends on how thinly sliced
8 dozen eggs
1 qt. milk
8 pkg. frozen chopped spinach
2 pkg. Lipton Onion Soup
1 qt. sour cream

Cook spinach and drain. Add onion soup and sour cream until it reaches a creamy consistency.

Line bottom of a well greased baking dish with slices of buttered bread (i.e., broadloam the bottom of the baking dish). Top with 1 layer of sliced ham. Smear spinach mixture over the ham. Make indentations in the spinach mixture, and crack one into each indentation. Cover and bake until eggs are set - about 20 minutes.

Makes 40 to 60 servings.
