VISCOTTA COOKIES 
1/2 lb. butter
2 c. sugar
1 lb. ricotta cheese
3 eggs
4 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla

ICING:

1 box of Confectioners' sugar
Vanilla
1/4 lb. soft butter
coconut, optional

Cream together 1/2 lb. butter and 2 cups sugar. Add eggs, one at a time; add ricotta, mix altogether. In a separate bowl mix flour, salt, baking soda, and vanilla, stir together. Add creamed ingredients and mix together real well. Drop by teaspoonsful on greased cookie sheets. Bake at 350 degrees 12 to 15 minutes. Frost cooled cookies, and sprinkle with coconut.
