EGGPLANT PARMESAN 
1 slice bread, cubed
1 1/2 lb. ground beef
1 med. eggplant
16 oz. tomato sauce
1/4 tsp. oregano
1/3 c. milk
Salt and pepper
1/4 c. flour
1/4 c. water
1/2 c. Parmesan cheese

Combine bread cubes, milk, salt and pepper. Add ground beef and mix well. Shape into 8 patties. Brown. Peel eggplant; cut into eight thick slices. Brush lightly with oil and coat with flour. Brown eggplant in same skillet used to brown meat. Arrange eggplant slices in 13 x 9 x 2 inch baking pan. Top each slice with a meat patty. Combine tomato sauce, water and oregano and pour over all. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees for 20 to 25 minutes.
