SHRIMP CREOLE 
2 lbs. shrimp, cleaned and deveined
1 lg. onion, chopped
2 ribs celery, chopped
1 bell pepper, chopped
1 stick butter
2 garlic pods, minced
2 sm. cans tomato paste
1 lg. can stewed whole tomatoes
Parsley sprigs
Green onions, chopped
1 tsp. basil
1 tsp. oregano
1 tbsp. sugar
Steamed rice

Saute onions, celery, pepper, and garlic in butter until onions are clear. Add tomato paste and tomatoes. Add a small amount of water as needed. Add basil, oregano, and sugar. Simmer 2 hours, stirring occasionally to avoid sticking. Add shrimp, green onions, and parsley. Cook for 30 minutes longer. Serve over steamed rice. Serve about 8.
