TWICE BAKED POTATOES | |
6-8 med. to lg. baking potatoes 1 c. sour cream 1/4 c. butter 1 egg 1 tsp. salt 1/4 tsp. white pepper Scrub and prick potatoes. Bake potatoes in 400 degree oven for 1 hour or until tender. While potatoes are still warm, cut an oval shaped hole in top of each and scoop out potatoes leaving skin intact. Mash potatoes. Add sour cream, egg, salt and pepper. Mix well. Put mixture back into potato skin. Cool thoroughly. Wrap individually in foil. Label, date and freeze. To serve: place unwrapped frozen potatoes in 350 degree oven for 50-60 minutes or until mixture is hot. Serves 6-8. |
