SPINACH SOUFFLE 
2 pkg. frozen chopped spinach
2 sm. cartons cottage cheese
1/2 lb. sharp cheese
6 eggs
1 stick butter
6 tbsp. flour

Cut cheese and butter together. Beat eggs and add to mix. Add cottage cheese. Cook frozen spinach half the recommended time and drain. Add spinach and mix. Add flour and mix. Put in casserole dish. Cover and bake 45 minutes at 350 degrees. Uncover and bake 15 more minutes.
