BISCUIT (YEAST RAISED) 
6 3/4 qts. all purpose flour
1/3 c. dry yeast
1 1/2 c. sugar
4 tbsp. salt
4 tbsp. baking powder
1 c. dry milk
1 lb. shortening
2 qts. water
2 eggs (optional)
2 egg whites, beaten
1 tbsp. water

NOTE: Bake for 15 minutes on 375 degrees or lightly browned.

Mix flour and yeast. Add sugar, salt, baking powder and milk in bowl. Add eggs, water and shortening. Mix well. Cover dough. Let rise in warm place until double. Punch down. Cover and let rise again.

Roll out and cut. Place on greased pan. Let rise until double. Mix egg whites and water; brush over biscuits before baking. Serves 96.
