CHICKEN CORDON BLEU 
2 whole chicken breasts
4 slices Swiss cheese
4 slices ham
1/4 c. flour
Salt and pepper
1 egg, beaten
1 tbsp. water
1/2 c. bread crumbs, seasoned
1/4 c. water

Skin and bone chicken breasts, and pound each piece between 2 sheets wax paper to flatten.

Arrange a slice of Swiss cheese, 1 slice of ham on each chicken piece. Fold the short sides of the chicken over the filling and roll up completely enclosing filling. Secure with toothpick.

Dust each roll with flour that has been seasoned with salt and pepper. Dip in beaten egg and coat with bread crumbs. Melt butter in 8x8 inch glass baking dish, 45 seconds in microwave. Roll the breaded chicken in butter to cool.

Cook, covered with wax paper in microwave 6-7 minutes on high setting or until juice runs clear when chicken is pierced, turning rolls over after 4 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
