CHOCOLATE - ZUCCHINI CAKE 
1 tbsp. lemon juice
1 c. milk
1/2 c. butter (softened)
1/2 c. vegetable oil
1 3/4 c. sugar
2 eggs
1 tsp. vanilla extract
2 1/2 c. all-purpose flour
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 c. shredded zucchini
1/2 c. semi-sweet chocolate morsels

Combine lemon juice and milk; let stand 5 minutes. Combine butter, oil, sugar in a large mixing bowl; beat at medium speed of an electric mixer until well blended. Add milk mixture, eggs and vanilla, mixing well. Combine flour and next 5 ingredients; add to egg mixture, mixing well. Stir in zucchini. Spoon batter into a lightly greased 13 x 9 x 2 inch baking pan. Sprinkle chocolate morsels over batter. Bake at 350 degrees for 45 to 50 minutes. Test with wooden pick. Let cool, cut into squares. 15 servings.
