MEAT LOAF SURPRISE 
2 c. mashed potatoes
1/3 c. chopped pecans
1 lb. ground lamb
1/3 c. water
1 1/2 tsp. salt
1 tsp. chopped chives
1 sm. onion, chopped
1 lb. ground beef
2/3 c. evaporated milk (sm. can)
1 egg
1/4 tsp. each pepper, celery seed & oregano
Dash pepper, paprika, butter & parsley

Combine 1 cup mashed potatoes with onion, pecans, meat, evaporated milk, water, egg, salt, pepper, celery seed and oregano. Mix well. Pack into 9"x5"x3" loaf pan. Bake in 350 degree oven for 1 1/4 hours. Drain off drippings. Turn loaf onto heat proof platter. Add chives and dash of pepper to remaining potatoes.

Top or mound potatoes on top and around edge of meat loaf. Sprinkle with paprika; dot with butter. Broil 2 minutes to melt butter. Garnish with parsley. Serve a green vegetable or fruit salad, hot rolls and preserves for an excellent supper. Serves 6 to 8.
