PENNSYLVANIA SWEET AND SOUR
CHICKEN
 
2 broiler-fryer chickens, cut up
1 bottle (8 oz.) Russian salad dressing
1 env. (1 3/8 oz.) dry onion soup mix
1 jar (10 oz.) apricot preserves

In large shallow baking pan, place chicken, skin side up, in single layer. In bowl, mix together salad dressing, soup mix and preserves. Pour over chicken. Bake uncovered in 350 degree F. oven, basting occasionally, about 1 hour or until fork can be inserted in chicken with ease. Pour remaining sauce over chicken when serving. Makes 8 servings.
