THREE - WAY SALAD 
1 head lettuce
6 carrots, chopped
1 cucumber, chopped
1 tomato, sliced
1 c. croutons or ground crackers
3 stalks celery, diced
1 sm. onion, chopped
3/4 c. diet dressing
1/2 c. grated Cheddar cheese
2 hard cooked eggs, chopped
2 (6 oz.) cans shrimp, optional

Combine all ingredients; toss lightly. Just before serving, add dressing and sprinkle cheese on top. Serves 6.
