LIMA DILL RICE 
2 c. Indian rice
1 sm. pkg. frozen lima beans, thawed
3 tbsp. dried dill
3 tbsp. corn oil
1 tsp. salt
2 c. water

In a bowl rinse rice 2 or 3 times. Then add enough water to cover rice. Add 1 teaspoons salt, stir and let soak for 1 hour. Drain. Divide rice, beans, dill into thirds to make 3 layers in saucepan. First layer: rice, dill, beans. Second layer: Repeat. Third layer: Repeat. Add 2 cups water and corn oil. Cook on low heat for 15 to 20 minutes. NOTE: check Ethnic section for Indian Rice.
