PITA SANDWICHES 
3 green, red, and/or yellow peppers, diced
2 stalks celery, diced
1 onion, diced
8 oz. Mozzarella cheese, diced or shredded
Green and/or black olives
Salami or ham, diced or grilled beef chunks
Pita pocket bread
Dressing (see below)

Mix together diced vegetables, cheese and meat chunks. Marinate overnight in dressing of vinegar and oil (see below). Serve by scooping several spoonfuls into a warmed pita pocket.

DRESSING FOR MARINATING:

1/4 c. vinegar
1/2 c. oil
2 tbsp. sugar
Salt, pepper, garlic powder
