CHICKEN JAMBALAYA 
3 chicken breasts, split and skinned
1/2 c. chopped onion
1/4 c. chopped green pepper
1 c. chicken broth
1 c. white wine
1/4 c. chopped parsley
1/2 tsp. basil
1 sm. bay leaf
1/2 tsp. thyme
1 c. raw rice
1/2 c. lean ham, cubed
1 c. canned tomatoes, drained

In a saucepan, bring to a boil the broth, wine, herbs, onion and green pepper. Place rice, ham, tomatoes and chicken in a large casserole. Pour herb sauce over all. Cover tightly and bake at 350 degrees F. for 25 or 30 minutes. Add seasonings. Turn heat off. Allow casserole to remain in the oven for 10-15 minutes.
