HERRING SALAD WITH POTATOES AND
APPLES
 
1 (12 oz.) jar pickled herring
1/2 raw red onions, sliced
3 slices brown bread, crust removed, soaked in water and squeezed very dry
1 lg. apple, peeled, cored and diced
1 boiled potato, peeled and diced
Salt and pepper to taste

Remove herring from the jar, leaving behind the onion that comes in the jar. Chop and mix first 5 ingredients in a food grinder or food processor. Add salt and pepper. Serve. Yield: 6 servings. Preparation time: 15 minutes.
