SAUSAGE CASSEROLE 
1 lb. hot sausage
2 c. chopped celery
1 c. chopped onions
1 c. cooked rice
1 can cream of chicken
1/4 c. chopped green pepper
12 stuffed olives
1/2 c. pecans; optional

Brown sausage and drain. Add celery and onions and cook for about 3 minutes. Add rice, soup, and peppers and simmer a couple more minutes. Pour into casserole dish; top with sliced olives and nuts. Bake at 350 degrees for 35 minutes.
