VICKI'S OATMEAL COOKIES 
1 1/4 c. shortening
3/4 c. sugar
1/2 c. brown sugar, packed
1 egg
1 tsp. vanilla
1 1/2 c. flour (unbleached)
1 tsp. baking soda
3/4 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
2 c. rolled oats
1 c. walnuts, chopped

Cream first 3 ingredients. Add egg and vanilla. Mix dry ingredients (except oats and nuts) together and stir in. Add oats and nuts. Take 1 cookie pan (with edges on it) and put another cookie pan (without edges) on top of it. Drop by teaspoonful onto top cookie sheet and bake for 9-10 minutes. Cookies will be fragile, but delicious.
