NAVY BEAN SOUP 
2 lbs. navy beans
4 qts. water
3 smoked ham hocks
1 med. onion, chopped
1 tbsp. butter
Salt (opt.)
Pepper

Rinse beans well, drain and place in large pot. Add water, add ham hocks; bring to a boil, lower temperature and simmer for 3 hours. Saute onions in butter, add to soup. Season with salt and pepper; serve.
