APPLESAUCE MUFFINS 
1/4 c. butter, softened
1/4 c. olive oil (better for us!)
2/3 c. sugar
1 egg
1 c. applesauce
1 1/2 tsp. cinnamon
1 tsp. allspice
1/2 tsp. cloves
1/4 c. sour cream (I use plain yogurt)
1/2 tsp. salt
1 1/4 tsp. baking soda
1 3/4 c. unbleached flour
1/2 c. raisins
1/2 c. nut meats, broken

Preheat oven to 350 degrees. Combine all ingredients in mixing bowl and stir thoroughly with spoon until mixed together all ingredients. Bake in paper lined or greased muffin tins for 20 to 25 minutes. Yields: 12 muffins.

I love this recipe! I don't make it with raisins, though - I don't like them very much. This makes a tasty, light and fluffy muffin or muffin bread. I'm going to try making it with pumpkin next!
