HOMEMADE VEGETABLE SOUP | |
2 lbs. beef with bone and meat 2 1/2 qts. cold water 1 1/2 tsp. salt 1 1/2 c. celery, diced 1 1/2 c. carrots, diced 1 1/2 c. potatoes, diced 1 1/2 c. onion, diced 3 c. canned tomatoes and juice 1/4 c. catsup 2 tbsp. parsley Cut meat into small cubes. Put bone and meat in large kettle. Add water and salt. Bring to a boil, skim off. Cover and simmer 3 1/2 hours until tender. Remove bone and add remaining ingredients except catsup and parsley. Cook, covered 45 minutes until tender. Season to taste. Add catsup and parsley. |
