2 tbsp. butter dash of Tabasco 4 eggs, lightly beaten 2 tbsp. finely chopped onions 2 tbsp. finely chopped bell pepper 1/2 c. grated Cheddar cheese tostados, crumbled salsa Melt butter in a large skillet. Allow to cool slightly. Stir Tabasco into eggs and pour into skillet. Return to heat. When eggs are almost cooked, add cheese and turn heat to lowest setting. Stir in crumbled tostados. Serve hot with salsa. Serves 2. |
