ENCHILADA CASSEROLE 
2 lbs. ground beef
1 onion
1 pkg. taco seasoning
1 sm. can bean dip
1 lb. grated cheese
16 corn tortillas
Salt and pepper to taste
1 (8 oz.) can tomato juice

Brown meat and onions; drain off excess fat. Add taco seasonings and water according to directions on package. Add bean dip and then in casserole dish. Layer meat mixture, tortillas, then cheese, ending with cheese on top. Cover and bake 30 minutes at 350 degrees. Serves 6-8 people.
