INSTRUCTIONS FOR COOKING VIRGINIA HAM | |
Wash ham to remove excess pepper. Cut 2 sheets of aluminum foil about 6 inches longer than ham. Place ham on one sheet. Put other sheet on top of ham, fold edges together sealing ham in foil. Place in shallow pan and bake in oven for 30-25 minutes per pound at 325 degrees (skin side up). ALTERNATE BAKING INSTRUCTIONS: Wash ham, place in roaster with 5 cups of water (skin side up). Cover roaster. Preheat oven to 375 degrees. Put roaster in oven. Turn oven to 500 degrees for 10 minutes only. Turn oven off and leave for 3 hours. Turn oven to 500 degrees again for 15 minutes. Turn oven off. Leave ham in oven for 6 or 8 hours. Do not open door once ham has been placed in oven. Note: Ham should not be exposed to 500 degree heat more than total of 25 minutes. FRIED HAM WITH RED EYE GRAVY: Cut ham in 3/8 inch thick slices. Place in heavy frying pan and turn heat low and cook ham through and through (approximately 15 minutes). Turn ham over one time. Do not overcook to the point where it is hard. RED EYE GRAVY: After removing ham from pan, add small amount of water to drippings and simmer about 3 minutes stirring constantly. |
