CHICKEN PARMESAN 
1 pkg. boneless chicken breast
2 eggs, slightly beaten
1 tsp. salt
1 tsp. pepper
3/4 c. very fine dry bread crumbs
1/2 c. vegetable oil
2 c. tomato sauce
1 tbsp. butter
1/2 c. grated Parmesan cheese
8 oz. Mozzarella cheese, cut in triangles

Combine eggs, salt, and pepper. Dip chicken in egg mixture, then bread crumbs. Fry like ordinary chicken (brown, then cover and cook awhile). Pour off excess fat. Put chicken in baking dish.

Stir tomato sauce in pan where chicken has been fried; heat to boiling and stir in butter. Pour over chicken and sprinkle with Parmesan cheese. Cover with foil and bake at 350 degrees for 30 minutes. Uncover and put Mozzarella cheese on top. Put in oven until cheese melts. Very good chicken!
