CHICKEN OLE' 
4 skinless chicken breasts
1/2 onion, rings separated
1 c. salsa
2 c. grated Jack cheese

Place chicken in skillet, place onion on top. Add water (1/2 to 1 cup). Simmer 30 to 40 minutes, until chicken is fully cooked. Pour salsa over chicken, cook on low 5 to 10 minutes more. Place 1/2 cup cheese on each breast, cover and remove from heat. Allow to sit for 5 minutes until cheese melts. Serve with rice and beans. Serves 4.
