CARROT CASSEROLE 
4 c. carrots, thinly sliced, or 3 cans cooked carrots, drained
1 c. Velveeta cheese, diced
1/2 stick butter
1 sm. onion, chopped
Potato chips or Ritz crackers

Cook carrots and onions for 5 minutes. Carrots should still be crisp. Place in a buttered casserole and cover with cheese, chips or crackers. Or, can layer ingredients in casserole. Bake 45 minutes at 350 degrees.
