SCANDINAVIAN SALAD | |
2 pkgs. lemon Jello 2 c. hot water 1 (12 oz.) bottle 7-Up 1 lg. can crushed pineapple, save juice 1/2 pkg. sm. marshmallows 2 or 3 bananas, sliced thin 1/2 c. sugar 2 tbsp. flour 1 egg yolk, beaten 2 tbsp. butter 1 c. whip cream 1ST LAYER: Mix first 3 ingredients, cool until firm. 2ND LAYER: Mix pineapple, marshmallows and bananas. Spoon over 1st layer. 3RD LAYER: Cook sugar, flour, egg yolk, pineapple juice and butter until thick. Cool, then mix whipped cream with cooked mixture and spoon over 2nd layer. 4TH LAYER: Mix 4 tablespoons grated American cheese, 2 tablespoons Parmesan cheese. Sprinkle over 3rd layer. Refrigerate 12 hours or overnight. May be used as salad or dessert. Serves 20. |
