PEACH GELATIN SALAD 
2 (3 oz.) pkg. peach Jello
1 pt. vanilla ice cream
1 lg. can peach slices, drained
2 c. hot water
1/2 c. reserved peach juice

1st Layer: Dissolve 1 package Jello in 1 cup hot water, cool slightly; add 2 cups vanilla ice cream (fold in good) leaving no ice cream unblended. Pour into 9 x 11 inch pyrex dish. Let set until firm.

2nd Layer: Dissolve 2nd gelatin in 1 cup hot water and 1/2 cup peach juice. Cool, pour carefully over 1st layer. Let set until firm.

Note: I sometimes use 2 boxes of gelatin for the 2nd layer. I like it better that way.
