POTATO AND SPINACH CASSEROLE | |
6-8 lg. potatoes, cooked and mashed 1 c. (8 oz.) sour cream 1 tsp. salt 1/4 tsp. pepper 2 tbsp. chopped chives 1/4 c. butter 1 (10 oz.) pkg. frozen, chopped spinach, thawed and well drained 1 c. (4 oz.) shredded Cheddar cheese In large bowl, combine all ingredients except cheese. Spoon into a greased, 2-quart casserole. Bake, uncovered, at 400 degrees for 15 minutes. Top with cheese and bake 5-10 minutes longer. Serves 6-8. |
