WINTER SQUASH QUICHE 
Pureed winter squash, such as butternut, banana, or buttercup, adds rich flavor and color to this winning quiche.

1 (9 inch) pastry shell
4 slices bacon
2 tbsp. chopped onions
1 c. shredded Swiss cheese
3 beaten eggs
1 1/2 c. milk
1 c. mashed, cooked winter squash
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. pepper

Prepare and bake pastry and keep it warm.

In small skillet cook the bacon until crisp. Drain bacon on paper towel; finely crumble and set aside. Reserve 1 tablespoon bacon drippings. Cook onion in reserved drippings until tender. Sprinkle cheese, bacon and onion in the warm pastry shell.

In a bowl combine the eggs, milk, squash, salt, nutmeg and pepper; pour into pastry shell.

Bake in a 325°F for 40 to 50 minutes or until knife inserted near center comes out clean. Let stand 10 minutes. Garnish with additional bacon.

Makes 6 servings.

This is a great recipe! Thanks for sharing. It was really easy to do. I didn't actually have Swiss cheese on hand but used mozzarella instead and it still turned out great! Quick and easy and made of things that I have on hand consistently this time of year.
