1/2 lb. bulgar wheat (cracked wheat) 4 fresh tomatoes, cubed 1 clove minced garlic, optional 1 sm. bunch scallions, coarsely chopped 6 parsley sprigs, finely chopped 4 fresh or dried mint leaves, finely chopped 3 tbsp. olive oil 1/4 c. lemon juice, fresh or jar Lettuce leaves or Syrian bread Soak cracked wheat for 15 minutes and drain thoroughly. Combine tomatoes, garlic, scallions, parsley, mint, olive oil, and lemon juice. Add cracked wheat. Toss again. Arrange on lettuce leaves on salad plates or place in pocket Syrian bread. |
