CARAMEL APPLE CAKE 
1 1/2 c. sugar
1 c. Wesson oil
3 eggs
2 c. flour
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. cinnamon
3 c. chopped apples
1 c. chopped pecans

Cake: Mix sugar, oil and eggs until blended. Beat 1 minute. Stir in remaining ingredients except apples and nuts. Beat 1 minute. Add apples and nuts. Bake at 350 degrees for 35-45 minutes.

ICING:

1/2 c. butter
1 c. brown sugar
1/4 c. milk
2 c. powdered sugar

Heat butter in 2-quart saucepan until melted. Stir in brown sugar; heat to boiling, stirring constantly. Boil and stir over low heat 2 minutes. Stir in milk. Heat to boiling; remove from heat. Cool to lukewarm. Gradually stir in powdered sugar. Place pan of frosting in bowl of cold water. Beat until smooth. Spread over cake.
