APPLESAUCE CORNBREAD 
1 1/4 c. corn meal
1/3 c. sugar
1/2 tsp. salt
1 egg
3/4 c. sweet applesauce
3/4 c. flour
1 tbsp. baking powder
1/2 tsp. cinnamon
3/4 c. milk
1/3 c. melted butter

Heat oven to 425 degrees. Sift together dry ingredients. Add egg, milk, applesauce, and butter. Beat with rotary beater until smooth, about 1 minute. Bake in greased 8 inch square pan for 20 to 25 minutes; serve hot.
