PIMENTO CHEESE 
1 1/2 lbs. sharp cheddar cheese, grated
8 oz. cream cheese
3/4 c. Hellmann's Mayo
2 7 oz. jars diced pimento, drained
1/2 tsp. black pepper

Beat with mixer the cheddar and cream cheese together. (Do not over beat.) Stir in mayo, pimento and pepper, blend well. This can be used for party sandwiches or put in a crock and served with crackers.
