PECAN TARTLETS 
3 sticks butter, soft
3 c. flour
9 oz. cream cheese (soft)
1 tsp. vanilla

FILLING:

1 box (2 1/4 c.) light brown sugar
3 tbsp. melted butter
1 1/2 c. pecans (chopped fine)
3 eggs
1 tsp. vanilla

Mix crust ingredients together like pie crust and put small amount in miniature cupcake tins. Press on bottom and up sides.

Beat eggs slightly. Add remaining ingredients for filling. Spoon 3/4 tbsp. filling into each crust. Bake at 350 degrees for 25 to 30 minutes. Makes 72.
