FRESH APPLE CAKE 
1 c. salad oil
2 c. sugar
2 1/2 c. flour
2 eggs, slightly beaten
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 c. pecans, chopped
3 c. cooking apples, chopped

Mix flour, salt, soda, baking powder, cinnamon. Add apples and nuts. Mix oil, sugar, eggs. Add to other mixture. Mix well by hand. (Do not use mixer.) Sprinkle 1 package butterscotch morsels on top of batter. Pour into 9 x 13 1/2 inch greased and floured pan. Bake 1 hour at 350 degrees.

ICING:

3/4 c. sugar
3/4 c. evaporated milk
1 can Baker's coconut
1/2 c. nuts, chopped

Boil sugar and milk 3 minutes. Add coconut and nuts. Cool 5 minutes and pour over cake while cake is still warm.
