SWEDISH CARDAMOM BISCUITS 
Dissolve 2 dry yeast packages in 1/2 cup warm water. Add 1 teaspoon flour to that and let rise.

In a saucepan melt together: 1 tbsp. shortening 1 tbsp. butter

Place 3 egg yolks in a mixing bowl and add 1 teaspoon salt. Mix. Add milk and shortening, beating as adding. Fill sifter (3 cups) with flour and sift onto other ingredients. Add yeast to this and mix. Cover and put in warm (not hot) oven to rise for 1 1/2 hours until at least 1 inch over starting point.

Add 3/4 cup sugar and 1 1/2 teaspoon (more if desired) cardamom and mix well. Add flour (whole sifter full, 3 1/2 to 4 cups) and stir well. Flour table and pour dough out.

Knead well - the more the better. Grease the bottom of dough and put back in pan. Shake sifter over the top of the dough twice so it won't stick. Put back in warm oven to rise 2 hours or until double in size. Take from oven and roll into long pieces. Slice off. Put in greased tins. Put in warm oven and rise 45 minutes. Bake in 375 degree oven for about 20 minutes. (10 minutes on each shelf.) Wipe over with egg white as soon as you remove them from the pan.
