HOMEMADE TOMATO SOUP 
6 med. fresh tomatoes
2 tbsp. butter
2 tbsp. vegetable oil
2 thinly sliced med. onions
1 (6 oz.) tomato paste
2 tsp. basil
1 tsp. thyme
3 c. chicken stock
1 tsp. salt
Pepper
Sugar

Peel tomatoes and cut into quarters; set aside. Heat butter and oil until melted. Add onions and cook until tender. Stir in tomatoes, paste, basil and thyme. Mash tomatoes slightly. Stir in broth and bring to a boil. Reduce heat, cover and simmer for 40 minutes. Press through a food mill. Strain and return to saucepan. Stir in salt and pepper. Sugar to taste.
