ZESTY VEGETABLE SOUP 
1/2 lb. hot or sweet Italian sausage (removed from casings)
1/2 c. chopped onion
1 sm. clove garlic, minced
3 c. chicken broth
1/4 c. white wine
14 oz. crushed tomato puree
1 carrot, peeled and chopped
1 potato, peeled and cubed
2 c. green beans, cut
1/2 tsp. dried basil
1/4 tsp. dried oregano
Salt and pepper to taste

In soup pot, saute sausages by breaking them up and stirring with a wooden spoon until cooked. Drain off and discard fat. Add onion and garlic to sausage. Cook, stirring, until onion is limp. Add broth, wine, tomato puree, carrot, potato, green beans and seasonings. Bring to a boil. Reduce heat. Cover and cook 25-30 minutes longer. Adjust seasonings to taste. Serves 4.
