PORK MEDALLIONS | |
1 (1 lb.) pork tenderloin, cut on the diagonal into 1/2 inch slices 3/4 c. fresh bread crumbs 3/4 c. grated Parmesan cheese 1/4 c. flour 1 egg, beaten with 1 tbsp. water 5 tbsp. butter 2 lg. apples, sliced 1 lg. onion, sliced 1/4 c. chicken broth Flatten pork slices to 1/8 inch. Combine bread crumbs and cheese. Dredge pork in flour, dip into egg. Coat with bread crumbs. Saute in butter about 3 minutes each side. Remove from pan. Keep warm. Add apple and onions. Saute 5 minutes. Add broth and simmer until syrup, about 5 minutes. Serve sauce over pork slices. |
