ROMAN RICE AND BEANS 
3/4 c. cooked dried beans
2 c. cooked brown rice
1 tbsp. oil
2 cloves garlic
1 lg. onion
2 carrots, sliced thinly
1 stalk celery
1 green pepper, chopped
1/2 c. parsley, chopped
3 tsp. dried basil
1 tsp. oregano
3 lg. tomatoes, coarsely chopped
Salt and pepper to taste

Prepare rice and beans according to directions on package. Saute, garlic, onion, carrots, celery, green peppers in oil. Add parsley, basil, oregano and salt and pepper. Mix well. Add tomatoes. Mix well. When serving garnish with grated Parmesan cheese.
