PINEAPPLE - ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
8 oz. can crushed drained pineapple
3 c. flour
2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
3/4 tsp. nutmeg
Raisins or nuts or dates (optional)

Beat eggs, oil, sugar and vanilla until thick. Stir in rest of ingredients and blend well. Pour into 2 greased and floured bread pans. Bake at 350 degrees for 45 minutes or until knife inserted in center comes out clean.
