PINEAPPLE - ZUCCHINI LOAF 
3 eggs
2 c. sugar
1 c. oil
3 tbsp. vanilla
2 c. unpeeled grated & well drained zucchini
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 (8 oz.) can crushed pineapple, undrained
1 c. walnuts

Preheat oven at 350 degrees. Grease and flour loaf pans. Beat eggs until fluffy. Add sugar, oil and vanilla. Blend well. Add zucchini. Add flour, baking soda, baking powder and salt to batter. Stir in pineapple and nuts. Turn into pans. Bake for about an hour or until toothpick comes out clean.
