BRAISED SHORT RIBS 
3 lbs. beef short ribs
Flour
Salad oil
3 tbsp. flour
1 1/2 c. water
1/2 c. stewed tomatoes
1/4 c. chopped carrot
1/4 c. chopped onion
1/4 c. chopped celery and tops
1/2 garlic clove, minced
Salt and pepper

Have short ribs cut in individual portions. Dredge in flour; brown on all sides in oil. Place ribs in baking dish. Blend the 3 tablespoons flour into pan drippings; gradually add water. Add carrots, onion, celery, garlic, salt and pepper; pour over ribs. Cover and simmer 1 hour 30 minutes or until tender.
