PUMPKIN ROLL RECIPE 
350 degrees
11x17-inch pan
Jelly roll pan

CAKE:

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour
1/4 c. nuts, pecans

Beat eggs and gradually add sugar and blend in remaining ingredients.

Spread onto a greased wax papered 11x17-inch jelly roll pan and sprinkle w/a 1/4 c. nuts. Bake for 15 minutes at 350 degrees.

Prepare while baking. A towel covered with powdered sugar. Turn cake out onto sugared towel and roll into a roll. Let cool thoroughly.

FILLING:

8 oz. cream cheese
1 tsp. vanilla
2 tsp. butter
1 c. powdered sugar

Unroll log and spread with filling. Reroll, chill and enjoy.

Sprinkle with powdered sugar before serving.
