BANANA CAKE 
4 oz. butter
6 oz. dark soft brown sugar
2 eggs
8 oz. self-rising flour
Grated rind of 1 lemon
2 oz. cherries, chopped
1 lb. bananas, mashed
4 oz. raisins
Icing and decoration of your choice

Mix butter and sugar together until light and fluffy. Beat in eggs, one at a time, adding a little flour with the second. Beat in the lemon rind and fold in the remaining ingredients. Place mixture in a bottom-lined greased bake pan. Bake in oven at 300 degrees for 1 1/4 hours. Turn off and cool.

Pour icing over cake allowing it to run down the sides. Decorate with slices of banana.
