CHUNKY CHICKEN-VEGETABLE SOUP 
4 med. scallions, thinly sliced or 1/2 c. thinly sliced onion
1/2 c. thinly sliced celery
10 oz. pkg. frozen mixed vegetables, broken up but not thawed
1 lb. skinless chicken breast, cut in 1/2 inch cubes
3 c. chicken broth
1/2 tsp. dried thyme leaves
1 lemon, thinly sliced or 2 tbsp. lemon juice
3/4 c. thin egg noodles
1/4 tsp. black pepper

Simmer until vegetables are done and chicken is tender. Serves 6 or 8.
