EGGPLANT TORTILLA 
1 eggplant (about 1 lb.)
1 garlic clove, crushed
1 med. tomato, sliced
1/2 tsp. Lawry salt
1/8 tsp. pepper
2 eggs, beaten
1 sm. onion
1 c. ground beef or pork
1/4 c. oil

Oven broil eggplant until it becomes soft and skin partly burned. Peel, flatten eggplant with fork and dip in egg. Brown meat. Saute garlic, onion and tomato. Mix with meat, season. Remove from heat, spread meat mixture over eggplant and press carefully. Heat oil, fry. Handle carefully.
