EASY SHRIMP FETTUCCINE 
1 egg
1/4 cup half & half
2-3 tbsp. grated Parmesan cheese
2 tsp. butter
1 tbsp. sliced green onion
1 garlic clove, minced or pressed
7 oz. med. to lg. shrimp, peeled & deveined
1 cup cooked fettuccine
1 tbsp. snipped fresh parsley
1/4 tsp. salt
1/4 tsp. coarse ground pepper

Beat egg with half & half in a small bowl. Add Parmesan cheese; set aside.

Melt butter in a large non-stick skillet. Add green onion and garlic; sauté until tender. Add shrimp and stir fry 2-3 minutes or until pink. Remove skillet from heat and stir in egg mixture. Heat and stir over low heat until slightly thickened. Fold in fettuccine, parsley and seasonings; blend well.

Serve immediately with additional Parmesan cheese.

Makes 2 servings.
